Cookie lane: the journey

Hi friends, My name is Ashleigh and I am the creator of Cookie Lane. My story starts somewhere back in the early 90s, where I would spend Christmas holidays with my Grandmother in her kitchen creating delicious treats for our family feast for Christmas Day. White Christmas, Rocky Road, Fudge, Puddings, Cakes, Pavlovas and whipping endless amounts of cream and sugar to go on top of everything. 

I have always had a bit of a love for baking and from my late teens I was always the designated cake/dessert maker when it came to parties for friends and family. 

It wasn't until late 2017 that a friend and I decided to attend a super cute cupcake class at our local cake store. My teacher for that class, Michelle was full of so much knowledge and kindness. with her guidance and encouragement, my friend and I walked out of the class with 6 cupcakes that actually looked half decent.

The following 12 months I attended more classes with Michelle, also i watched way too many Youtube tutorials and within a short space of time, I came to a complete realisation that I actually had an intense passion for cake decorating AND I was actually pretty damn good at it! 
Late 2018 my life had been flipped turned upside down after having my most magical creation- My son, Elias. After spending my days getting to know this incredible human, I managed to peel myself away from him to attend another class and this time was the turning point and I knew I wanted to turn my new found love of decorating all things cakes and cookies, into a career.

cookie lane was born and in Early 2019 I was lounging on the couch with my son watching a documentary on Levain Bakery in America, they created the most insane looking chocolate chip cookies and I literally wanted to jump through the tv and eat all of them (They were like pregnancy cravings, only I wasn't pregnant lol) I jumped online, grabbed a copycat recipe and absolutely fell in love with these magical creations. I made it my mission over to adapt and adjust the recipe as I felt to get to a taste, texture and flavour I was happy with. after finding this, I purchased a little food van which was aptly named Flossy (Because she was fairy floss pink) and added a coffee machine as I am a trained barista of 20 years and because what better combo than cookies and coffee!? 

October 2023 and I have just opened my first little stand alone store solely focusing on providing my community with incredible coffee and delicious chunky cookies (As well as cakes, cupcakes and sugar cookies) and I am looking forward to the next chapter and adding to my story.
